Preheat the oven to 180°C (fan).
Score each chicken breast. In a bowl, coat the chicken with the oregano, smoked paprika, garlic powder, sea salt, and pepper.
Add the shallot, garlic, spinach, sun-dried tomatoes, stock powder, cream, and water to a baking dish. Mix to combine.
Place the chicken breasts into the baking dish and sprinkle with the grated cheese.
Bake for 30 minutes, or until the chicken is cooked through.
Serve with creamy mashed potatoes, pasta, or rice.
