Preheat oven to 180 degrees (fan forced).
Score each chicken breast. In a bowl coat the chicken in the oregano, smoked paprika, garlic powder, sea salt and pepper.
Add the shallot, garlic, spinach, sundried tomatoes, stock powder, cream and water to a baking dish.
Mix to combine.
Place the chicken breast into the baking dish and sprinkle the cheese over each chicken breast.
Bake for 30 minutes.
Serve with creamy mashed potatoes, pasta or rice.
